pumped up mix

well, this post is hopefully the first in a string of ones to come that include a little more than just photos of our sweet boy (although I may have some complaints from a few grandparents on that). I want to give the blog a bit of a makeover that may not fully come together until the new year but I'm envisioning adding more recipes, home projects and anything else worth sharing.

so as much as I enjoy to bake foods that require a lengthy recipe and extra time...I also can appreciate the ones that are completely the opposite and just as yummy. I got the simple recipe from a blog I love who got it from a post on pinterest so I decided to pay it forward and share with you. all you need are 3 ingredients...maybe 4 if you want to include chocolate chips.



1 box yellow cake mix
1 16 oz. can pumpkin
1/2 tsp. pumpkin pie spice
chocolate chips (optional)

mix ingredients well then either pour batter into a loaf pan or muffin cups like I did. bake at 350 degrees for 25 minutes or until toothpick comes out clean. I actually added chocolate chips to only half my batter and thus, a breakfast option and dessert option. duh...winning.

* note: do not make the cake mix according to package directions...the canned pumpkin replaces all eggs, oil etc!
